Thai Green Curry Chicken

Description

Chicken and broccoli dish with the flavors of Thai green curry and peanuts.


Ingredients

1/2 cup sliced onion (I prefer purple onions for this recipe)
3/4 cup broccoli pieces
1 chicken thigh, boneless, skinless, sliced thin), or use breast meat if you prefer
1 tsp Thai green curry paste (such as Taste of Thai or Blue Elephant)
2 T peanut butter (any kind you like)
1/2 cup water
2 oz rice noodles

1/2 T chopped peanuts (optional)


Instructions

Slice or chop the onion, broccoli, and chicken as described and place in a 36 oz glass container.
Mix the curry paste, peanut butter and water in a separate bowl
Add sauce mixture to the chicken and toss until evenly coated
Place lid on the container and set inside the Hot Logic box.
Cook for 1 hour
Add the noodles. Make sure the noodles are submerged under the sauce, adding a small amount of water if needed (1 T at a time).
Re-cover and cook for one more hour.
Test the noodles for doneness and cook longer, in 15-minute intervals until they reach the firmness you prefer.  You can also cook the noodles separately if you prefer.

Serve topped with chopped peanuts (optional)

Notes

Equipment needed:  Hot Logic Mini Portable Food Warmer36 oz covered glass dish.

Low carb diet – eliminate the noodles and use sugar-free peanut butter.

Whole 30 – eliminate the noodles, substitute Whole 30 compliant coconut milk, and add more chicken.

Gluten-free – no changes need, this recipe is already GF
