Chili-Glazed Salmon Hot Logic Mini Recipe

This is not your typical campervan meal, but it may be one of the best. And it sure is one of the easiest.

For now store bought salmon will do, fresh or frozen.
I made this recipe with asparagus, but zucchini (spiralizer anyone?) would also work well.
Other than the small bowl used to whip up the glaze, this is all you have to clean up after making this campervan meal. Sweet. More time to hike, read or blissfully gaze at a sunset.

Let’s cook
This recipe is so easy. Just mix the glaze ingredients together, slather on the salmon and put alongside a vegetable in the cooking dish. That’s it.
This campervan meal is delicious with some hot rice (just warm some precooked rice in a second Hot Logic, or by some other method).
A sauce can be made to accompany the fish. Just mix some mayonnaise with sriracha to taste, but this is optional.

Description
One of the best Hot Logic Mini recipes you’ll find. Moist, flakey salmon with a zingy glaze.
Ingredients
1 6 oz Salmon filet
Glaze:
- 1 T chili-garlic sauce
- 2 tsp soy sauce (use GF brand if needed)
- 1/2 tsp fresh grated ginger
- 2 tsp brown sugar or honey
Instructions
- Mix the glaze ingredients in a small bowl
- Slather the glaze on top of the salmon in a rectangular glass dish
- Place asparagus spears or another vegetable alongside the fish
- Cover tightly
- Cook in Hot Logic Mini for 45 minutes -1 hour or until the salmon flesh is opaque and flakes with a fork.
- Serve alone or with rice
