Broccoli and Cheese Frittata Hot Logic Recipe

I wasn’t sure my Hot Logic Mini could cook an egg dish, but it sure can. My frittata or crustless quiche turned out perfect! No burned edges, no undercooked middle, perfect and moist from edge to edge.

But first, let me share a secret tip

I’ll share a little secret I use with many of my campervan recipes.

After all, storage space is premium in a camper van, especially in the refrigerator. And so many vegetables have to be purchased in amounts one person just can’t use up before they spoil. This is a conundrum for people who like a variety of vegetables.

What do I do?

My secret method is…..

I think like a backpacker and use dehydrated vegetables.

After cooking with them for a while now, I am a convert. Did you know dehydrated vegetables retain their nutritional qualities? In most cooked foods you can’t tell the difference between dehydrated and fresh, other than the size. Dehydrated veggies aren’t chunky, but come in small pieces.

I always have a stash of 20 or more dehydrated vegetables and soup mixes I can use to create delicious meals. Some of my faves are bell peppers, Jalapeno peppers, onion, broccoli, potatoes, and beans.

My food waste has plummeted since I started cooking with dehydrated vegetables.

And the shelf life is years. Yes, years.

Dehydrated broccoli and leeks in water

In the dish above I’ve placed some dehydrated broccoli and leeks in hot water so they soften up. I drain the vegetables after about 10 minutes and add them to the egg mixture. I’ve made this recipe a number of ways and soaking improves the texture of the leeks in the final product. If I only use broccoli, no soak is needed.

You don’t need much for this Hot Logic recipe. A couple of eggs, grated cheese, milk, some vegetables. You’ll see my little pouches of Harmony House dehydrated vegetables in the above photo.

Just whisk the eggs, milk, salt, and pepper and pour into a 7 ounce buttered ramekin. Then add the cheese and drained vegetables (or fresh if using) and swirl around with your finger or a spoon/knife.

It is important to place the ramekin in a shallow water bath. I just pour about an inch of hot water into a rectangular glass dish.

This is one of the few times I pre-heat my Hot Logic Mini, by plugging it in for 15 minutes or so before I place the filled ramekin in the water bath.

After the ramekin is placed in the water bath, inside the preheated Hot Logic Mini, zip it closed and cook for 3 hours. Do NOT put the cover on the glass container for this recipe. (I’m going to try this for a longer, overnight cook and see how it turns out).

Open up your Hot Logic and the frittata should be perfect. If there’s a little moisture on top, wick it up with a bit of paper towel.

Broccoli and Cheese Frittata

Description

Perfectly cooked, tender egg frittata for one


Ingredients

Scale
  • 2 eggs
  • 1/2 T milk
  • 1/2 oz grated cheese (about 2 T)
  • 1 T dehydrated broccoli (1.52 T finely chopped fresh)
  • 1 tsp dehydrated leek flakes (optional, rehydrate in 2 T hot water prior to use, then drain before adding to the egg mixture)
  • salt and pepper to taste

Instructions

  1. Preheat your Hot Logic Mini by plugging it in for 15 minutes
  2. Place a hot water bath in the Hot Logic (place 1 inch of hot water in a rectangular glass dish)
  3. Butter a 7-ounce ramekin
  4. Whisk the eggs, milk, salt, and pepper
  5. Pour into a buttered ramekin
  6. Add grated cheese and vegetables, mixing lightly
  7. Place the ramekin in the water bath in the Hot Logic cooker
  8. Zip the Hot Logic closed
  9. Cook for 3 hours
  10. Wick away any condensed moisture on top of the frittata before serving
